Completely Nuts Fudge Brownie Pie

When life gets nutty and an easy-to-make, comforting treat is required, turn to this Completely Nuts Fudge Brownie Pie.  A moist, fudgy brownie, loaded with roasted peanuts, goes “over the top” with a topping of marshmallows, nougat-carmel candy bar pieces, chocolate and caramel drizzles and more chopped peanuts!  Serve with a scoop of your favorite ice cream, or eat alongside a hot cup of coffee!

For Brownie Layer:

3/4 cup all-purpose flour

1/4 cup cocoa powder

1 tsp. baking powder

1/2 cup (1 stick) unsalted butter, melted

1 cup granulated sugar

2 large eggs, at room temperature

2 tsp. vanilla

1 cup roasted, salted peanuts, chopped + extra for topping

For Topping and Chocolate Drizzle:

1 cup Snickers candy bars (about 1012 “fun size” or 34 regular size), cut into chunks

1 cup mini-marshmallows

1/4 cup semisweet chocolate chips

1/2 tbsp. unsalted butter

1/4 cup caramel sauce (store-bought or homemade)

Additional chopped, roasted peanuts

Instructions

Preheat oven to 350 degrees F.  Lightly spray a 9-inch pie pan with nonstick spray.  Set aside. 

To Prepare Brownie Layer:

In a medium size bowl, sift flour, cocoa and baking powder together.  Stir in melted butter, granulated sugar, eggs, and vanilla until a trace of dry ingredients remain.  Stir in 1 cup chopped peanuts and mix until just combined.  (Be careful to not over mix the batter.  Over mixing will create a tough brownie.)  Pour batter into the prepared pie pan and smooth the top.  Bake for 25 minutes, or until the brownie pulls away from the pan edges and top appears slightly cracked.  Turn off oven.

Top the brownie evenly with 1 cup chopped Snickers candy bars and 1 cup mini-marshmallows. Place back into the oven for 5 minutes.  The marshmallows will puff and candy bars should melt slightly.  Remove from oven and place on a wire rack to cool for about 10 minutes. 

Prepare the chocolate drizzle by combining the semisweet chocolate chips and butter in a microwave-safe bowl.  Microwave for 1 minute.  Stir until smooth.  If necessary, melt in 30-second increments, stirring after each time.  

Drizzle the chocolate and caramel sauces over the slightly cooled brownie.  Top with additional chopped Snickers candy bars and chopped roasted peanuts.  Serve warm, with ice cream; or cool and eat.

Notes
