Love the almond, coconut, and chocolate combination from a famous candy? The fabulously easy peanut butter and chocolate no-bake oatmeal cookie just got upgraded to the No-Bake Almond Joy-ish Cookie!
2–1/2 cups granulated sugar
1/2 cup unsalted butter
1/2 cup milk (whole or 2%)
1/4 cup + 1 tbsp. cocoa powder
1/2 tsp. salt (kosher or table)
1/2 cup smooth almond butter
1 tsp. almond extract
3 cups old-fashioned oatmeal
2 cups sweetened flaked coconut
In a large saucepan over medium heat, combine granulated sugar, butter, milk, cocoa powder, and salt. Bring to a boil. Boil for 2 minutes. Remove from heat. Stir in almond butter and almond extract until smooth. In a large bowl, pour mixture over oatmeal and coconut. Stir well to combine. Immediately drop tablespoons of mixture onto parchment lined baking sheets. You can also use an ice cream scoop (#20-24) to form cookies. Store at room temperature in a tightly sealed container for up to a week.
