Tropical Christmas Balls (Day 12-2022)

Are colder temperatures making you wish for warmer weather? Tropical Christmas Balls might look like little snowballs, but with flavors of orange, coconut and pineapple, sunny skies are in sight.

Ingredients

120 oz. can crushed pineapple, very well drained

8 oz. (1 block) cream cheese, at room temperature

2 cups (5 oz. package) sweetened shredded coconut, divided

1/2 cup graham cracker crumbs

13 oz. package orange jello powder*

Instructions

In a large bowl, using a hand-held mixer, beat cream cheese to smooth it out.  Mix in the drained pineapple, 1 cup of coconut, graham cracker crumbs, and orange jello until thoroughly combined.  Refrigerate mixture for about 1 hour.

Using a tablespoon or #50 ice cream scoop (2 tbsp.), scoop mixture and roll into balls.  Roll mixture in remaining 1 cup coconut, pressing if necessary.   Store Tropical Christmas Balls in the refrigerator in an air-tight container for up to 10 days.  These are best eaten 1-2 days after making.

*Substitute lemon or pineapple jello.
