For Cinnamon Baking Bits:

2/3 c. granulated sugar

3 T. ground cinnamon

2 T. vegetable shortening

2 T. light corn syrup

1/41/2 tsp. vanilla extract

Instructions

To Make Cinnamon Baking Bits:

Preheat oven to 200 degrees F.  Line a baking sheet with parchment paper or a Silpat liner.  Set aside.

In a medium-sized bowl, blend all ingredients together until a grainy uniform mixture forms.  Pour cinnamon mixture onto the parchment lined baking sheet.  Press into a 1/4-inch thick square shape.  Bake for about 30 minutes or until the square is melted and slightly bubbly. Be careful to not burn the sugar.  Let mixture cool completely.  Cut cooled cinnamon mixture into 1/4-inch sized pieces, or pulse quickly in a food processor.  Store in an air-tight container for up to a year.  Use as desired in your favorite baked good recipe requiring cinnamon.
