Cheese Crack Dip & Double-Dippin’ in San Antonio’s Missions

DISCLAIMER: One bite of this A.M.A.Z.I.N.G. chili cheesy dip may result in double-dipping! AND going back for seconds. And thirds. And breakfast for tomorrow! It’s that good!

Our taste-buds were first tantalized at the Hubby’s Coast Guard retirement party. The theme was all-things taco, complete with this dip made by our beloved Mrs. A.! Not only are our friends A.M.A.Z.I.N.G. like this addictive cheese dip, they’re basically family. Our love of all things tasty is mutual!!

Mrs. A. browned up this, shredded that, poured out cans and jars of other things and wha-la…this ooey-gooey cheesy, chili-burger, and salsa loaded lusciousness! Hubby coined the name of this dip as “cheese crack” because very few people could stop eating once they started scooping chips into it. It’s been called this ever since!

Following this legendary encounter, we’ve ventured to one of our favorite destinations, San Antonio, Texas. Home to the Alamo, the Riverwalk, our beloved friends/family and Mrs. A’s insane dip! At our request and trip to the local H.E.B. grocery store, Mrs. A throws a batch in the crock-pot and off we go to sight-see!

Beyond San Antonio’s iconic Alamo and Riverwalk areas (and loosening the notch on our belts), lies the San Antonio Missions National Historic Park. To get a true sense of San Antonio’s complex history, I highly recommend visiting. A series of four active Catholic churches, each Mission site offers a weekly Sunday mass in its historical setting. The oldest standing is Mission Concepcion, dedicated in 1755, and the oldest unrestored stone church in America! This year marks the 300th Anniversary of the Mission San Jose, known as the “Queen of the Missions” serving as the largest of the four missions! Mission San Jose has been largely restored with fabulous arches and grounds. Wow!

Before indulging in chili-cheesy goodness, epic treks to San Antonio were required. Twelve to fourteen-hour road trips weave a strange combination of boredom, outcries of “when are we gonna get there” and amusing conversation in the car! Subjects range from what our CB radio handle should be (“Mother Trucker” definitely!), to bucket-lists of where I’d wanna sleep at (Don’t ask!), and food (Shocker right?!). Son A is known to eat almost everything, except…baked potatoes! Who would’ve thought?

In honor of Mrs. A’s epic dip and a way to rebrand baked spuds for Son A, I give to you my version of Cheese Crack Dip on the Ultimate Loaded Baked Potato!

The beauty of this combination is pure ease! Cheese Crack Dip and baked potatoes can be prepped and cooked in crock pots. Perfect for tail-gating, avoiding kitchen heat in the summer, and just fix-n’-forget…until you insanely crave it!

Adjust the salsa and queso cheese’s heating according to your personal Scoville Scale, crack open your favorite beverage, and crunch away!

Cheese Crack Dip

A modified version of my dear friend Ashley Bennett’s recipe, this insanely cheesy, chili-rich dip can result in double and triple dipping.  Enjoy with chips or topped on a baked potato! Once you start, you might not be able to stop!

Ingredients

For Cheese Crack Dip:

2 lbs. ground beef*

1 large onion, diced

5 cloves garlic, minced

215 ounce cans Hormel Chili with No Beans

115 ounce jar queso cheese**

1 cup thick and chunky salsa**

1 block cream cheese, cubed at room temperature

4 cups sharp cheddar cheese, shredded

Your favorite tortilla chips or baked potato

Instructions

Over medium-high heat, brown ground beef, diced onion and garlic until no pink shows and onion is translucent.  Put in large crockpot.  Add Hormel chili, queso cheese, salsa, cream cheese, and sharp cheddar cheese.  Mix well.  Cook on medium to high heat until cheeses are melted and well-incorporated.  Allow mixture to cool slightly for thicker dipping enjoyment.  Enjoy with tortilla chips or over a baked potato.

Notes

*Ground beef can be substituted with ground turkey.

**Adjust salsa and queso cheese heat preferences to match your tastes.
