chocolate-caramel-loaded-krispie-treats

Rice krispie treats. Have you ever met someone who honestly will turn up their noses to this lunchbox treat? I haven’t. Dozens, if not hundreds, of traditional rice krispie treat recipes linger in cookbooks and on the WWW. But to date, a layered loaded rice krispie treat hasn’t crossed by kitchen path. Until now…

Layers of buttered marshmallow puffed rice surround a center of milk chocolate and silky homemade caramel, dotted with more mini marshmallows. The best part? No oven required. But be warned…these treats are both luxurious and sweet. Your sweet tooth will definitely thank you!

Ingredients

Scale

2 cups (one 12 oz. bag) milk chocolate chips

One 14 oz. can sweetened condensed milk

14 soft caramel pieces, unwrapped

1/2 cup (1 stick) salted butter, at room temperature

10 cups (one 12 oz. box) puffed rice cereal, divided

10 cups (about two and a half 10 oz. packages) mini marshmallows

12 tbsp. (11/2 sticks) salted butter, divided

Instructions

Grease a 9 X 13-inch pan with nonstick baking spray.  Set aside.

In a medium bowl, melt milk chocolate chips in a microwave for 1 minute on high power.  Stir.  Melt in 30 second increments until smooth.  Set aside.

In another medium bowl, melt sweetened condensed milk, caramel pieces, and 1/2 cup butter for 1 minute on high power.  Stir.  Melt in 30 second increments until smooth.  Set aside to cool slightly.

In a large bowl, melt 4 cups mini marshmallows and 6 tbsp. butter for 1 minute on high power. Melt in 30 second increments until smooth.  Stir in 5 cups puffed rice cereal until evenly combined.  Press evenly into the greased pan using a piece of parchment or waxed paper.   Spread melted chocolate onto cereal.  Pour caramel mixture onto the chocolate layer.  Sprinkle 1 cup mini marshmallows over caramel layer. Let chill in the refrigerator for about 15-20 minutes to set.

Make second layer of cereal treats by again melting 4 cups mini marshmallows and 6 tbsp. butter for 1 minute on high power. Melt in 30 second increments until smooth.  Stir in 5 cups puffed rice cereal until evenly combined.  Press evenly onto the caramel layer using a piece of parchment or waxed paper.  Cut into bars.
