Baked Garlic Shrimp with Spinach Pasta is a dish we love to eat on hot Spring and Summer days. It’s a cinch to put together, taking about 30 minutes to prepare. The combination of light shrimp, fresh herbs, and a crispy Panko cheese topping are perfect for a light week-night meal. Any type of pasta will work with this dish–linguini, penne, gemelli, elbows, bowties. It’s your call. Just toss a bag of fresh spinach into the cooked, drained pasta and serve with the shrimp. Wha-la! Easy peasy, lemon squeezy over the top if you desire!

Baked Garlic Shrimp with Spinach Pasta

Baked Garlic Shrimp is simple to prepare and tastes like you spent hours making it! Slightly-spiced and herbed, garlic shrimp is baked with a parmesan, Panko breadcrumb crust. Serve it over your favorite pasta with fresh spinach for a quick week-night meal.

Ingredients

132 ounce bag frozen shrimp, deveined and tail-on*

1/4 cup olive oil

1/4 cup parsley**

45 cloves garlic, minced

1/2 tsp. crushed red pepper flakes

1/4 tsp. black pepper

1/2 tsp. salt (table or kosher)

1/4 cup butter, melted

1/2 cup Panko breadcrumbs  (If you want to get creative, try making homemade Panko Breadcrumbs from the Pioneer Woman blog.)

1/2 cup grated Parmesan cheese, plus more for serving

116 ounce package of your favorite pasta (penne, fusilli, elbow, gemelli, bowtie, etc.)

18 ounce package fresh spinach

Lemon juice, if desired.

Instructions

Preheat oven to 300 degrees F.  Thaw frozen shrimp by placing them in a colander under cold, running water.  Allow shrimp to sit for about 3 minutes.  Drain water and repeat until shrimp are pliable enough to peel.  Peel and set aside.

Place peeled shrimp evenly in an 11 X 17-inch or a 9 X 13-inch baking dish.  Drizzle olive oil over shrimp.  Sprinkle parsley, garlic, red pepper flakes, black pepper, and salt over shrimp.  Cover and bake for 15 minutes.

Turn shrimp after the first 15 minute bake time. Drizzle melted butter, breadcrumbs, and parmesan cheese evenly over shrimp.  Bake for about 7-10 minutes or until shrimp are pink and cooked through.

As shrimp are cooking, cook pasta according to package directions. Wash spinach if not already pre-washed.  After draining the cooking water from the pasta, toss spinach into the pasta.  The spinach will wilt and cook in the pasta. Set aside.

To serve, place spinach pasta mixture in a bowl,  Top with baked shrimp and crumb topping from the baking pan.  Add additional cheese, red pepper flakes and a squeeze of lemon juice, if desired.

Notes

*Size 21-25 Jumbo or Size 35-45 Large shrimp

**Fresh is best, but dried will work too.
