No-Bake Almond Joy-ish Cookies & Chewie in Space

May the fourth be with you! But watch out for the revenge of the fifth! For Star Wars loving peoples, like Son B, these are sacred days. For the rest of our family, it’s May 4th and Cinco de Mayo, complete with tacos and margaritas on the rocks. Rather than posting something related to Cinco de Mayo, I’m channeling Son B’s love for all things Luke, Leia, Hans Solo and Chewy.

The “first” Star Wars movie for me will always be Episode IV: A New Hope. It’s the first one in the seemingly unending saga of space pirates or space cowboys ‘n’ indians. So after watching what I thought were the first, second and third movies, you can imagine my complete confusion when Episode I: A Phantom Menace debuted. It’s like the movie was going back in time to go forward to where we already were. And for the record, I am NOT a Jar-Jar Binks fan.

To say Son B is a Star Wars fan is putting it very, very lightly. His recall and attention to detail for all things Star Wars is intense and spot-on. So much so, he becomes extremely annoyed with us mindless droids when we ask questions about the trilogies and anthologies. Guess we all have a passion right?

In an earlier post, I shared a story about Star Wars in Death Valley. It was on this same adventure, Son B first went to Disneyland and Galaxy’s Edge. Forget the Teacups, Space Mountain, or the Mad Hatter rides, Son B was obsessed with Galaxy’s Edge. I think every movie prop, model, or costume was studied and photographed with complete care by Son B.

Fortunately or unfortunately, the only character out for photo ops was Chewbacca. After shuffling in zig-zagging lines, well over the posted 15 minutes of wait time, we were able to see the big guy. As you can see from the pirated photo, Son B was ecstatic.

The flip side to this pretty common place story is the name Son A has bestowed upon Chewbacca–the Space Yeti. It’s done to simply get an immediate rise out of Son B. Son A’s latest harassment involves Chewy being derived from a sad, old Bigfoot costume, which was jazzed up with a bandolier. The comeback? “You’re not funny!” SMH! The saga continues…

In honor of Chewy, Bigfoot or not, and today’s “revenge of the fifth,” we’re making No Bake Almond Joy-ish Cookies. They’re a spin-off of my mother-in-law’s beloved No Bake Oatmeal Cookie recipe. I’ve traded out peanut butter for smooth almond butter, added sweetened flaked coconut, and upped the cocoa to compensate for the addition of sweet-smelling almond extract. This ridiculously easy cookie does require some cooking–boiling the sugar, butter, cocoa and salt together into a smooth syrup. Skipping the boiling time would cause your final product to be grainy. No one likes a gritty cookie. Not even Chewy! Here’s to a new spin on an old-fashioned favorite treat that looks like a furry Wookiee!

No-Bake Almond Joy-ish Cookies

Love the almond, coconut, and chocolate combination from a famous candy? The fabulously easy peanut butter and chocolate no-bake oatmeal cookie just got upgraded to the No-Bake Almond Joy-ish Cookie!

Ingredients

Scale

21/2 cups granulated sugar

1/2 cup unsalted butter

1/2 cup milk (whole or 2%)

1/4 cup + 1 tbsp. cocoa powder

1/2 tsp. salt (kosher or table)

1/2 cup smooth almond butter

1 tsp. almond extract

3 cups old-fashioned oatmeal

2 cups sweetened flaked coconut

Instructions

In a large saucepan over medium heat, combine granulated sugar, butter, milk, cocoa powder, and salt.  Bring to a boil.  Boil for 2 minutes.  Remove from heat.  Stir in almond butter and almond extract until smooth.  In a large bowl, pour mixture over oatmeal and coconut.  Stir well to combine.  Immediately drop tablespoons of mixture onto parchment lined baking sheets.  You can also use an ice cream scoop (#20-24) to form cookies.  Store at room temperature in a tightly sealed container for up to a week.
