Cinnamon Applesauce Salad

cinnamon-applesauce-salad

Merriam Webster defines a salad as “any of the various “usually cold dishes” including raw greens, vegetables and toppings. It is served with dressing or small pieces of food, or usually mixed with a dressing or set in gelatin.” So I guess this recipe really is a salad per se. (Can I get away with saying it’s diet food even if it’s loaded up whipped cream?!)

Nonetheless, Cinnamon Applesauce Salad has been a staple on our holiday table for as long as Minion A and B can remember. Perfect with turkey and ham, it’s a mixture of boxed red gelatin and cinnamon red hot candies stirred together with boiling water, and applesauce added. Easy peasy!

The key with this recipe is to continually stir the gelatin and red hot candies in the boiling water. This will ensure the hard candy melts down to almost nothing. Just be sure to take out any undissolved candy pieces before you stir in the applesauce. In a pinch, you can substitute cinnamon disk candies. Just use the same amount (about 1/2 cup crushed candy) and stir away.

Season’s eatings!

  • Yield: 6 to 8 Servings 1x

Ingredients

Scale

16 oz. or 2-3 oz. packages of red gelatin (black cherry, strawberry, etc.)

2 cups boiling water

1/2 cup cinnamon red hot candies

114 oz. can applesauce

Instructions

In a large bowl, dissolve gelatin and cinnamon candies in the boiling water.  (If needed to dissolve the candies quicker, place bowl in the microwave for 1 to 2 minutes.)  The cinnamon candies may not dissolve completely. Remove excess candy with a spoon.  Stir in applesauce.  Pour into a 8-inch container.  Refrigerate until firm.   Serve as a side with a white meat like pork, chicken or turkey; or eat as a dessert with a dollop of whipped cream or topping.
