Cucumber Lime Refresher

IDK about you, but when the mercury starts rising I start reaching for refreshing beverages. This year it’s cucumber infused water. I’ll blame this year’s drink fad on a recent trip to a bathhouse in Hot Springs, Arkansas. The Hubby coincidentally came across a recipe for an adult version of cucumber water…complete with lime, mint and vodka. Simply said, it’s delightfully refreshing! But with all good things, this one has a little bit of a wait.

In a gallon-sized pitcher, add about 1-1/2 fresh cucumbers (cut into 1/8-inch slices), 24 to 30 fresh mint leaves (spearmint), and 1 cup of freshly squeezed lime juice. Stir vigorously in 1 cup of simple syrup and 16 ounces of your favorite vodka. Then put this thirst quenching goodness in the chill chest to mingle for about an hour, or more (if you can wait!). This concoction needs to chill thoroughly.

When the time is up (or if your patience is up), fill a pint glass about halfway with ice, and pour the cucumber-lime-minty goodness to about 3/4 the way full. Top with club soda, garnish if you’re feeling fancy, and enjoy. My weed pulling in 90 degree plus heat just became a little cooler! Remember to enjoy responsibly.

Cucumber Lime Refresher

Cucumber, lime and mint are divine! On a scorching day, there’s nothing more refreshing than a Cucumber Lime Refresher. Make ahead to enjoy after yard work or during a BBQ with friends.

Ingredients

1 cup simple syrup*

11/2 cucumbers, cut into 1/8-inch slices

24 to 30 fresh mint leaves (spearmint)

1 cup freshly squeezed lime juice

16 ounces vodka

Club soda

Crushed ice

Instructions

In a gallon-sized pitcher, combine simple syrup, cucumber slices, fresh mint leaves, lime juice, and vodka.  Stir vigorously to combine the ingredients and muddle the cucumber, mint and lime.   Place in the refrigerator for about 1 hour, or until chilled throughly.

When ready to serve, fill pint glasses about halfway with ice.  Fill glasses to about 3/4 full with cucumber mixture.  Top with club soda and serve.

Notes

*Combine 1 cup granulated sugar and 1 cup water in a saucepan.  Bring to a simmer over medium heat.  Remove from heat and let cool to room temperature.  If you’re in a rush, you can place the saucepan over a bowl filled with ice to quickly cool.
