We first enjoyed the Key West Kiss on our inaugural visit to the Hemingway Rum Company on the corner of Greene and Simonton streets in Key West. The Hubby was initially intrigued by the company’s famous literary namesake, but became even more intrigued by their Papa’s Pilar rum line.

Thirsty visitors to Hemingway Rum Co. learn about both Ernest Hemingway’s literary antics and high-adventure exploits, and distilling quality rum to honor Papa. Through the distillation process, the alcohols in rum separate out into “cuts” known as “heads” and “hearts.” Cheaper, flavored rums, known as heads, are separated out right after the volatile alcohols like ester and ketones (think nail polish removers). This rum literally smells like dog butt and is the stuff of hangover headaches! Flavors like vanilla and blueberry are added to make it more sellable. Hemingway Rum Co.’s Papa’s Pilar line uses only the hearts, resulting in a rich, smooth-sipping rum best served over ice.

After the distillery tour, rum tasting and a cocktail class featuring Papa’s is up for the taking. Be prepared to have a great time and make some new friends in the process!

Key West Kiss

Rummingly refreshing and nuttingly sweet, the Key West Kiss is a perfect way to start Happy Hour!

Ingredients

Scale

2 ounces blonde or dark rum (We love Papa’s Pilar!)

1/2 ounce Amaretto liqueur

2 ounces pineapple juice

Instructions

Fill a cocktail shaker and rocks cocktail glass each halfway with crushed ice. Pour all ingredients into the cocktail shaker.  Shake for 15 to 30 seconds.  Strain drink into the rocks cocktail glass. Garnish with a pineapple wedge.
