Texas Style Chili (No Beans)

I don’t know if there are any perks for being the only female in a house full of males. I won’t include the canines in this conversation…yet! In all honesty, the way I was raised, my female figures could hold their own to the manly crowd. The women in my inner circle could handle themselves better with men than women. They were no-nonsense, tough-as-nails, get the job done, and stay composed, gals! The expectation was to pull up your big-girl panties and suck up your tears. Move it on, get ‘er done! To this day, I say I speak fluent cowboy, pirate, and sailor.

Given my upbringing and marrying The Hubby, it should be NO surprise how things might run in our Zoo of a house. I will disclose the Minions were raised with the ultimate of table manners and how to interact with adults using small talk and niceties. (I learned from the best!). But, when the filters were down, potty humor was/is on full display!

I cannot pinpoint when the silent, but deadly, gas bomb egocentrically happened in our house. (The Hubby is quite modest, among his outer circle, but remains relentless among the inner. Basically, the Minions were doomed from conception. ) But, I contribute this to a long-haul family trip, most likely during an a 1400 mile-long drive from Cody, Wyoming to San Antonio, Texas several years ago.

Getting into the weeds of potty humor is, well, just gross. Marinating. Dutch-ovening. Ick! Minion B and The Hubby were heading home today when I called to notify them of tonight’s cold-weather dining option. No complaints, other than one of them wasn’t able to roll down the window due to other’s flatulence issue. SMH!

This version of Texas Style Chili is simple. No beans. All beef and lots of spices. I opt for canned green chilies and little to nil cinnamon. Basically, this is my pantry, freezer and spice cabinet safe recipe. It’s not pretentious or fancy, and has almost all your staple safe stuffs in it! Serve it with diced onion, sour cream, cilantro, shredded cheese and others. It’s even better over homemade Cornbread! Stay warm and keep a window cracked!

Texas Style Chili (No Beans)

No frills.  No magical fruit.  All beef and succulently spicy!  Serve this Texas style chili with a side of cornbread.

Ingredients

1 pound hamburger

1 pound stew meat, cut into bite-size pieces

4 tbsp. olive oil, divided

24 ounce cans diced green chilies*

1 cup diced red or yellow onion

6 cloves garlic, minced

3 tbsp, chili powder

2 tbsp. paprika or smoke paprika

1 tbsp. ground cumin

1 tbsp. dried oregano

2 tsp. chipotle powder

11/2 tsp. unsweetened cocoa powder

1 tsp. ground coriander

1/8 to 1/4 tsp. ground cinnamon**

114.5 ounce can diced tomatoes, undrained

16 ounce can tomato paste

4 cups beef broth or stock

2 bay leaves

Salt and pepper, to taste

Diced onion, sour cream, shredded cheese for garnish, if desired.

Instructions

Using a large Dutch-oven or pot heat 2 tbsp. olive oil over medium-high heat. Brown the hamburger and stew meat.  Remove from the pan and set aside.

Drain any remaining grease from the pot.  Add additional 2 tbsp. olive oil to the pan.  Cook green chilies and onion until soft, but not browned.   Add garlic, chili powder, paprika, cumin, oregano, cocoa powder, coriander, and cinnamon.  Cook until fragrant about 30-45 seconds.   Stir in undrained tomatoes, tomato paste, beef broth and bay leaves.  Bring to a simmer.  Reduce heat to low.  Cook for 4 to 6 hours, uncovered and stirring often,  until thickened and meat softened.

Serve with onions, sour cream, or shredded cheese, if desired.

Notes

*If available, use fresh diced and seeded jalapeno peppers.

**Feel free to omit or increase as much as 1/2 tsp. according to your flavor palates. The Hubby is not a cinnamon fan in his chili, so we opt for minimum amounts.
