Pretzel Peanut Chocolate “Cookies” (Day 2-2022)
By definition, a “cookie” is a baked or cooked snack or dessert that’s round, flat and small. Technically, these Pretzel Peanut Chocolate “Cookies” are cooked. Chocolate chips are melted. Although this recipe is better associated with candy, I’m calling it a cookie today. Salty, sweet, and super simple! Melt chocolate, mix in with peanuts and pretzels and scoop onto parchment/wax paper to set. That’s it! Day 3 is just as nice and easy!

Ingredients
2 cups chocolate chips (semisweet, milk or dark), melted
3 cups mini pretzel sticks, broken up into 1/2-inch pieces
2 cups roasted, salted peanuts
1 tsp. vegetable shortening or coconut oil (optional)
Colored sprinkles (optional)
Instructions
In a microwave safe bowl, melt chocolate chips on high for 1 minute. Stir. Microwave in 30-second increments and stir until smooth. If chocolate gets clumpy, melt and mix in vegetable shortening or coconut oil. Stir until smooth.
In a large bowl, combine pretzels and peanuts. Pour melted chocolate over mixture and stir to evenly combine all ingredients. Scoop by rounded tablespoons onto parchment or wax paper lined baking sheets. Decorate with colored sprinkles, if desired. When treats are set, store in tightly sealed container for up to 10 days.
