Oh, Monday, Monday…will you be good to me? At least it’s not a rainy day and a Monday! LOL!

Some Mondays are smooth sailing and others are full-on nuts! This morning, our furry alarm clock went off early. Too early. It started with a series of high-pitched whines and sighs, gradually building into a crescendo of yips and full-on barking. Oh the Pup! Our newest four-legged family member. The cute, little, crated-up, black Labrador pup. At o’dark thirty every morning, she’s anything but adorable.

If you’ve kept up with this daffy digital dribble, you know we’re nutty about our furry family members. (Check out the Bacon and Cheese Dog Biscuits and Ginger Thyme Lime Curd posts.) Dragging Captain Sunshine (aka Son B) out the door to school, followed closely behind by The now Three Doggy Stooges, is nothing new. But what’s changed is the Flabby Tabby deciding to join us. Somewhere in between wagging tails and textbooks, Joe the Flabby Tabby voluntarily cat-a-pulted his way into the car. Maybe Joe thought he was missing out on something or needed an education. In any case, our school commute now chauffeurs four fuzz balls around twice a day.

It should come as no surprise…our car windows are constantly graffitied with nose art. The critters are avid travelers. They’ve joined us as we zig-zagged up and down the East Coast, and across the United States several times. But Joe’s deliberate effort to get in the car this morning reminded me of a nutty adventure from not too long ago.

When The Hubby retired from the Coast Guard, we relocated from coastal Virginia to northern Wyoming. Our travel route wandered us over Kentucky and Tennessee’s backroads, which meant Civil War battlefield stops and bourbon distilleries. Both of which The Hubby adores! But leave it up to Murphy’s Law of Traveling! Several unexpected events occurred, including a Facebook takeover by our Geezer Dog, Buddy. Here’s how it all went down:

Nuts! That’s what this trip was. Completely nuts! As a way of looking back and laughing, I concocted this crazy Completely Nuts Fudge Brownie Pie to road trip with this post on the WWW. It’s Monday and chocolate seemed highly appropriate and necessary! Not just any baked chocolate item though…a comforting, fudge brownie easily whipped up in one-bowl! To highlight all of the wacky, insanely-fun antics, this moist brownie is loaded up with roasted, salted peanuts.

To push this treat almost over the edge, like this cross-country trip, the brownie is finished off with marshmallows, chopped Snickers bars, chocolate and caramel drizzles and more roasted peanut chunks. One bite of this gooey, glorious goodie is like pulling into the comforts of your driveway after a long, hectic drive. And it goes great with morning coffee or a scoop of vanilla ice cream. Or both!

Here’s to the next road trip, be it nuts or not. In our house, it’s highly likely (99.999%) it will be another eccentric experience! Happy Monday!

Completely Nuts Fudge Brownie Pie

When life gets nutty and an easy-to-make, comforting treat is required, turn to this Completely Nuts Fudge Brownie Pie.  A moist, fudgy brownie, loaded with roasted peanuts, goes “over the top” with a topping of marshmallows, nougat-carmel candy bar pieces, chocolate and caramel drizzles and more chopped peanuts!  Serve with a scoop of your favorite ice cream, or eat alongside a hot cup of coffee!

Ingredients

For Brownie Layer:

3/4 cup all-purpose flour

1/4 cup cocoa powder

1 tsp. baking powder

1/2 cup (1 stick) unsalted butter, melted

1 cup granulated sugar

2 large eggs, at room temperature

2 tsp. vanilla

1 cup roasted, salted peanuts, chopped + extra for topping

For Topping and Chocolate Drizzle:

1 cup Snickers candy bars (about 1012 “fun size” or 34 regular size), cut into chunks

1 cup mini-marshmallows

1/4 cup semisweet chocolate chips

1/2 tbsp. unsalted butter

1/4 cup caramel sauce (store-bought or homemade)

Additional chopped, roasted peanuts

Instructions

Preheat oven to 350 degrees F.  Lightly spray a 9-inch pie pan with nonstick spray.  Set aside. 

To Prepare Brownie Layer:

In a medium size bowl, sift flour, cocoa and baking powder together.  Stir in melted butter, granulated sugar, eggs, and vanilla until a trace of dry ingredients remain.  Stir in 1 cup chopped peanuts and mix until just combined.  (Be careful to not over mix the batter.  Over mixing will create a tough brownie.)  Pour batter into the prepared pie pan and smooth the top.  Bake for 25 minutes, or until the brownie pulls away from the pan edges and top appears slightly cracked.  Turn off oven.

Top the brownie evenly with 1 cup chopped Snickers candy bars and 1 cup mini-marshmallows. Place back into the oven for 5 minutes.  The marshmallows will puff and candy bars should melt slightly.  Remove from oven and place on a wire rack to cool for about 10 minutes. 

Prepare the chocolate drizzle by combining the semisweet chocolate chips and butter in a microwave-safe bowl.  Microwave for 1 minute.  Stir until smooth.  If necessary, melt in 30-second increments, stirring after each time.  

Drizzle the chocolate and caramel sauces over the slightly cooled brownie.  Top with additional chopped Snickers candy bars and chopped roasted peanuts.  Serve warm, with ice cream; or cool and eat.

Notes

Cover Completely Nuts Fudge Brownie Pie with plastic wrap and store at room temperature for up to 3 days.
